2021 'A Forest' Sauvignon Blanc
Inspired by The Cure ‘A Forest’
Can you see the Sauvignon Blanc for the forest? With an abundance of commercial styles of Sauvignon Blanc on the market we set out with this wine to showcase a different side of the grape. We had access to some fruit from an organic grower in Margaret River so 2021 ‘A Forest’ was born. When we received our very small batch of fruit we decided to leave on skins for just 24 hours as we wanted to ensure we kept the balance of freshness and brightness. Pressed off and racked straight into barrels with heavy solids where it patiently waited for the wild yeasts to take hold. Spent 6 months in older French barrels before bottling.
TASTING NOTES
Light lemon in colour with lime highlights. Aromas of green apple and dried dill with a touch of vanilla and shortbread biscuit. Crunchy, refreshing acid in the mouth, bright citrus fruit, a touch of something herbal and a little lemon sherbet. Textured finish that lingers with a refreshing citrus twist.
