2021 'Only in Dreams' Chardonnay
Inspired by Weezer "Only in Dreams"
Whilst a challenging year presented in 2021 the fruit was of great quality. Whilst we were not sure if we would make this wine at all in 2021, the Chardonnay in barrel looked amazing. The wine was 100% barrel fermented in 3+ year old French and Austrian oak, 100% wild yeast. Instead of the usual blending with this wine we sent the Chardonnay off to bottle all by itself after 6 months in barrel and left in the cellar for 12 months before release. After periodically looking at the wine we felt it was ready to unleash on the world.
TASTING NOTES
Medium lemon in the glass. On the nose there are touches of underripe stone fruit, apricot kernel, lemon and grapefruit with a hint of sour cream. On the palate the wine is textured and medium bodied with more richer stone fruit. backed with a creamy finish.
